  • 1 tablespoon water or lemon juice

Method

Dissolve the sugar in the water, then add the jam and stir over gentle heat until well mixed. Bring to the boil and simmer gently until the glaze hangs in heavy drops from the spoon, takes 3–5 minutes. Draw the pan off the heat and brush the glaze while still hot over the surface of the cake.
