Method

American frosting makes a popular alternative to royal icing for a Christmas cake. The icing should be swirled in peaks over the cake and a sprig of holly adds sufficient decoration.

Measure the sugar and water into a saucepan. Place over low heat and stir until the sugar has dissolved. Wash down the sides of the pan with a clean pastry brush dipped in water to remove every grain of sug
