Method

A recipe with an unusual tangy flavour. It can be used immediately but does improve on storage.

Halve and squeeze the juice from the lemons. Reserve the juice. Quarter the lemon peel and remove the excess white pith and flesh. Place the lemon skins in a small saucepan, cover with cold water and bring up to the boil. Drain away the water, then re-cover with fresh cold water and repeat th
