  • 1 lb (450 g) prunes
  • ½ pint (3 dl)

Method

Soak the prunes overnight in the mixed claret and water. Place the prunes and the liquid in a saucepan and add the pared lemon rind and cinnamon. Bring up to the boil and simmer gently for 10–20 minutes or until the prunes are just tender. Strain the prunes from the liquid and spread them out to cool for a few moments so that they may be handled easily.
