Rub the lumps of sugar over the rind of the well-washed lemon until the sugar is yellow and full of the lemon zest. Place in the base of a large bowl or jug and crush the sugar. Add the strained lemon juice and stir to dissolve the sugar. Add wine and the sherry.
Just before serving add a few ice cubes and slices of cucumber for decoration.
