Measure the coffee into a saucepan. Add the boiling water, stir well and bring slowly to the boil. Draw off the heat, cover with a lid and infuse for 15 minutes. Strain through muslin into a bowl, add the sugar to taste and stir well. Cool, then chill until required.
When ready to serve, pour the chilled coffee into a tall jug. Add plenty of ice cubes and sufficient chilled milk to dilu
