  • 6 oz (175 g) self-raising flour
  • 1 level teaspoon baking powder

Method

Sift the flour and baking powder into a bowl and add the sugar. Mix together the egg, milk and melted, but not hot, butter. Pour into the centre of the flour and, using a wooden spoon, beat the mixture gently, gradually drawing in the flour. Then beat thoroughly for a moment to make a smooth, fairly soft, mixture. Spoon the mixture into a small, well-buttered roasting tin, or shallow baking tin
