  • 8 oz (225 g) self-raising flour
  • ½ level teaspoon salt

Method

Sift together the flour and salt on to a plate and set aside. Cream together the butter and sugar until light. Gradually beat in the lightly mixed eggs and finely grated orange rind. Add a little of the sieved flour along with the last few additions. Using a metal spoon, fold in remaining flour along with the chopped peel, walnuts and orange juice.
