  • ½ lb (225 g) fresh cranberries

Method

Pick over the cranberries and chop coarsely. Sift together the flour and salt. Add the sugar and finely grated orange rind. Mix thoroughly and make a well in the centre of the ingredients. Add the eggs, orange juice and melted butter. Mix well and then fold in the chopped walnuts and cranberries.

Spoon the mixture into a greased and lined 9 × 5 × 2
