  • 8 oz (225 g) self-raising flour
  • ½ level teaspoon salt

Method

Sift the flour and salt into a large mixing basin. Add the butter, cut into pieces, and rub into the dry ingredients, until the mixture is crumbly and the fat evenly distributed. Add the sugar, sultanas or seedless raisins, the walnuts and the glacé cherries, which have been rinsed under warm water to remove the outer sugar coating, then patted dry and cut in half.
