Sieve the icing sugar into a mixing bowl. Add the ground almonds and sugar. Mix the egg with a few drops of almond essence. Stir in sufficient of the lightly mixed egg to mix the ingredients to a smooth, firm dough. Turn the mixture on to a working surface lightly sprinkled with castor sugar, and divide the mixture into portions. Add different colours to each, leaving one plain.
