Method

Wash the oranges and cut them in half. Remove the peel and the pith by inserting the handle of a teaspoon between the pith and the skin all the way round the fruit, before removing the flesh of the fruit with the fingers.

Mix the bicarbonate of soda and the water in a bowl. Add the orange peel and allow to soak for 20 minutes. Drain the peel and rinse in cold water. Simmer gently in fre
