  • 4 lb (1 kg 800 g) strawberries

Method

Wipe the strawberries clean and remove the hulls. Place in a large, heavy saucepan, crushing a few of the berries near the base of the pan. Stew gently over very low heat for 15 minutes, until the fruit is soft and the juices run.

Add the sugar and stir over low heat until dissolved. Add the lemon juice and bring up to the boil, cook rapidly for 15–20 minutes until setting point is reac
