Method

Pumpkin has an unusual, sweet flavour and this recipe is sometimes called mock lemon curd as it has a remarkable resemblance to lemon curd in both flavour and appearance.

Any greengrocer will cut a piece of the desired weight off a large pumpkin. Remove centre seeds from the pumpkin piece and cut away the peel. Chop the flesh and place in a large saucepan, cover with cold water and brin
