Method

Fruit cheeses are turned out of small moulds on to a plate and they are then cut with a knife or spoon for serving. They may be eaten as a preserve or used as a sweet accompaniment to hot or cold duck, pork or ham.

Rinse the damsons and remove the stalks. Place the fruit in a pan with the cloves and add the water. The water should almost cover the fruit. Bring to the boil and simmer gen
