Ingredients

  • 1 tsp olive oil
  • 1 onion, peeled and finely chopped
  • 1 carrot, peeled and thinly slic

Method

Heat the olive oil in a large saucepan. Add the onion and fry gently until it begins to brown and caramelize. This will give the broth a good colour. Add the rest of the vegetables, the parsley and watercress. Rinse the lentils, beans and chick peas, and add to the saucepan together with 3 pt / <
