Herb, Walnut and Lemon Dressing

Ingredients

  • 1 tbsp finely chopped chives
  • 1 tbsp finely chopped parsley
  • 1 tsp thyme leaves
  • 2 garlic cloves, peeled and chopped
  • 2 oz / 60 g chopped walnuts
  • ½ tsp sea salt
  • freshly ground black pepper
  • 2 fl oz / 60 ml walnut oil
  • ¼ pt / 140 ml sunflower or grapeseed oil
  • juice of ½ lemon

Method

Mix the herbs together in a bowl. Crush the garlic and walnuts with the salt and mix into the herbs. Add pepper to taste, then slowly add the oils and finally the lemon juice.
