Radishes with Three Butters

Ingredients

  • 3–4 bunches of radishes, trimmed
  • 8 oz / 230 g salted butter, at ro

Method

Pile the radishes into a serving bowl. Divide the butter into three, and into each portion, mix one of the next three ingredients. Season with pepper, and pack each butter into a small ramekin. Serve with crusty bread and a bowl of coarse salt.
