The sesame oil used in this recipe is not the toasted light brown sesame oil of Chinese cooking, but clear virgin sesame oil. The sesame paste is available at good delicatessens and Cypriot shops.
Put the chick peas in a blender or food processor with the rest of the ingredients. Process until smooth, then spoon into a bowl and trickle a little more olive oil on top. Garnish with coriander, and serve with olives, hot pitta bread, sesame bread sticks and raw vegetables.
