One of the most popular dishes served in the evenings in Viennese restaurants is schinkernfleckerl, a soothing dish of pasta with chopped ham. In Vienna, it is made with small squares of pasta, but you could make it with macaroni. In fact, it bears a close resemblance to macaroni cheese.

Ingredients

  • 1 oz / 30 g butter
  • ½ oz / 15

Method

Melt the butter in a saucepan, sprinkle in the flour and cook gently for a few minutes, stirring constantly. Gradually add the milk, stirring continuously until you have a smooth white sauce. Cook for 10 minutes, then stir in the cheese, ham and tomatoes until the cheese has melted. Meanwhile, cook the macaroni according to the directions on the packet. Drain and mix with the sauce.
