Couscous

Method

Most of the couscous on sale in our shops is precooked and does not require further cooking. To serve hot, say as an accompaniment to spicy fish, meat or vegetable stews, simply place in a colander or sieve over a pan of boiling water, and allow to heat up and moisten in the steam for 20–30 minutes. About 8 oz / 230g couscous will be sufficient for four or six people. It also makes an excellent salad.
