  • 1 large garlic clove, peeled
  • extra virgin olive oil

Put the bread under the grill, and toast one side only. Rub the untoasted side quickly with garlic, brush with olive oil, and put a piece of cheese on each piece of bread. Put back under the grill and toast until the cheese is browned and bubbling. The heat will be sufficient to soften the cheese to a spreading consistency. Serve immediately.
