Grilled Goat’s Cheese on Country Bread


  • 8 slices rustic bread
  • 1 large garlic clove, peeled
  • extra virgin olive oil
  • 8 slices goat’s cheese or 8 whole Crottinde Chavignol cheeses, or similar


Put the bread under the grill, and toast one side only. Rub the untoasted side quickly with garlic, brush with olive oil, and put a piece of cheese on each piece of bread. Put back under the grill and toast until the cheese is browned and bubbling. The heat will be sufficient to soften the cheese to a spreading consistency. Serve immediately.


After rubbing the untoasted side of the bread with garlic, place a few leaves of radicchio on each piece, sprinkle liberally with olive oil, season, and place under the grill until the radicchio has browned slightly. Lay the cheese on top of each slice, and return to the grill for a few minutes until the cheese is lightly browned and bubbling.
