This is based on soglia al arancia, which was on the menu del giorno one New Year’s Day at Ristorante Fini in Modena. Red mullet is my favourite fish for it, although it can be adapted to most fish fillets. The oranges I like best to use are navel oranges or blood oranges. If you can get limes with good skin, try using them instead. In Southern Spain Seville oranges are used; try them in this recipe.
