This is a dish we like to prepare at my parents’ house in Gozo, where fennel grows wild in great abundance all over the island.
Scale and clean the fish. Brush with olive oil, inside and out, and season lightly. Put a few slices of onion or shallot in the bottom of an oiled ovenproof dish.
