This is a dish we like to prepare at my parents’ house in Gozo, where fennel grows wild in great abundance all over the island.

Ingredients

  • 2 bream, lb / 680 g each
  • extra virgin olive oil</

Method

Scale and clean the fish. Brush with olive oil, inside and out, and season lightly. Put a few slices of onion or shallot in the bottom of an oiled ovenproof dish. Put the fish on top with a few fennel sprigs tucked into the cavities and around the fish. Cover with more onion rings, and splash on the wine and a little more olive oil.
