  • 1 tbsp tomato purée

Method

Mix together the sugar, tomato purée, spices, soy sauce, half the olive oil and the vinegar to make a marinade. Rub the chicken pieces all over with lemon juice, and season them lightly. Turn the chicken pieces in the marinade until well coated. Cover and refrigerate for a couple of hours or overnight if more convenient.
