Method

Parboil the potatoes for 5 minutes. Put the milk in a saucepan with the cloves, onion, leeks and bay leaf, bring to the boil and simmer for 5 minutes. Prick the sausages, white pudding and black pudding all over to stop them splitting and, one batch at a time, immerse them in a pan of boiling water for a minute and then plunge them into a bowl of ice cold water.
