  • 1 lb / 455 g strong white flour, at warm room temperature
  • tsp salt

Method

Sift the flour and salt together into a large warm bowl. Pour half the water into a small bowl, and sprinkle the yeast on top. After a few minutes, it will begin to become active and bubble on the surface. Make a well in the flour and pour in the yeasty liquid, and then the remaining warm water. With your hands, or a wooden spoon, mix the flour and liquid together until it forms a sticky mass.
