These two quickly made breads do not contain any yeast. The raising agents are cream of tartar, bicarbonate of soda, and baking powder.
Sift the dry ingredients together into a bowl. Cut up the lard or butter, and lightly rub it into the flour with your fingertips until the mixture resembles fine breadcrumbs. Make a well in the centre, pour in the buttermilk, and mix until you have a soft, pliable, but not sticky, dough. Add more liquid or flour as necessary.
