Crumpets, like blini, are made from a thick batter that is raised with yeast. The batter is poured into special crumpet rings that are placed on a hot greased griddle, and not allowed to spread out.

Ingredients

  • ¾ pt / 430 ml water
  • 1 tsp active dried yeast

Method

Warm ½ pt / 280 ml water, sprinkle the yeast on to it, and add the sugar. Set aside until the yeast is bubbling, then stir in the flour and salt, and mix until you have a smooth, soft dough or firm b
