I rarely think of using herbs when making puddings and cakes, but a jar of dried lemon grass was next to the small bottle of sweet lemon oil when I went to get out my baking things one day. I had planned to make a moist, lemon-flavoured coconut cake. A pinch of lemon grass made it even more fragrant.
