Baked Apricots with Vanilla


  • 3 oz / 85 g unsalted butter
  • 12 dried apricots, soaked for 2–3 hours
  • 1 vanilla pod
  • 1 orange


Cut out four large greaseproof paper hearts, and butter them lightly. Place three apricots on one half of each paper heart. Cut the vanilla pod in four, and tuck each piece amongst the apricots. Grate the orange zest on top, and then squeeze the juice over. Dot with the remaining butter, fold over the paper hearts, and seal the edges to make parcels. Place the parcels on a baking sheet and bake in a preheated oven at 180°C / 350°F / Mark 4 for 15 minutes.


Prunes and other dried fruit can also be baked in this way.
