When you want something a little more elaborate than a bowl of berries, this simple gratin fits the bill perfectly.

Ingredients

  • 1 lb / 455 g prepared berries, such as raspberries, strawberries (halved or quartered, if large), redcurrants and wild strawberries

Method

Divide the berries (which you can heat through if you wish, but do not cook them) between four shallow heatproof dishes. Sprinkle them with the kirsch or framboise. Whisk the eggs and sugar in a bowl set over a saucepan of hot water until thick, pale and foamy. Spoon the mixture over the berries, and place under a preheated grill long enough to brown the surface lightly. Serve immediately.
