Some of the very best puddings using soft summer fruits are simple variations on the strawberries and cream theme. One of the richest is Eton Mess - strawberries crushed with sugar and stirred into whipped cream. An even nicer version is this uncooked fool recipe.

Ingredients

  • 8 oz / 230 g strawberries

Method

Put the fruit in a bowl, sprinkle on the sugar, and crush with the back of a fork. Whip the cream, and stir the rosewater into the fruit. Stir fruit and cream together, and pile into glasses or bowls to serve.
