Fresh fruit purées are amongst the best to serve with sweet soufflés. Lemon or lime marmalade, heated with or without rum or whisky, makes a good sauce for a citrus fruit soufflé. Melted chocolate, dark or white, is excellent with a plain sweet vanilla soufflé. I am less keen on the sabayons, which are light custard sauces flavoured with wine or spirits. These rather over-egg, in my view, this rich dish.
