Banana Tart


Peel and slice 6 bananas, and soak them in a little lemon juice and 3 tablespoons of rum for 1 hour. Mix 4 eggs with 7 oz / 200 g sifted icing sugar, and stir in 7 oz / 200 g ground almonds. Arrange the drained banana slices in the prepared pastry case, mix any remaining rum and lemon juice mixture with the egg mixture, and pour this over the bananas. Scatter flaked almonds over, and bake as above.
