Method

Wash the plums, halve them, and remove the stones. Cut each half into two or three pieces, and place in a wide, shallow pan with the water. Simmer gently until the fruit is soft. Rub the passion fruit pulp through a sieve on to the plums. Add the lemon juice, and stir in the sugar until it has dissolved. Bring the mixture to the boil, and boil rapidly until setting point is reached. Pot in clea
