Brandy Butter

• 6 oz / 170 g unsalted butter, softened
• 3 oz / 85

Beat the butter until it is pale and creamy, and then, still beating, add the sugar and finally the cognac. Pack into decorative pots or ramekins. Cover with a waxed paper disc and cling film until required.
