  • 2 sprigs each of mint, French tarragon and basil
  • 1 pt / 570 ml water
  • 10 oz / 280 g sugar
  • 2 measures white rum
  • 1 measure orange liqueur
  • juice of 1 lemon
  • juice of 1 lime
  • chilled sparkling mineral water


Put the herbs and water in a saucepan, bring to the boil, and simmer for 3 minutes. Strain the liquid into a large jug, and stir in the sugar. Cool and chill. Into a large glass jug, pour the rum, liqueur and fruit juices. Stir in the herb syrup, and then add the mineral water to taste.
