Summer is the time to start a rumpot or tutti frutti, if you are planning to serve it at Christmas. Good, sound unwashed fruit, starting with strawberries, sugar in equal proportions and rum to cover it all is what you need, as well as a deep earthenware jar with a lid. If you do not have one, a tall glass ‘sweet jar’ will do, as long as you have a dark place to store it.
