We serve this with afternoon tea to welcome guests staying at The House Over-By. Jean Ferguson, who lives nearby The Three Chimneys, gave the recipe to me. Jean also cut the ribbon when we officially opened The House Over-By. She is in her eighties now and has many fascinating tales to tell of her island life in Raasay and Skye. When she was young she cooked in a number of the grander Skye houses and Highland shooting lodges.
