Larger onions are often used in a recipe for flavouring but the smaller-sized button onions are very good to serve as a vegetable. Spicy flavours like mustard or tomato ketchup can be used to glaze them and they make an excellent accompaniment for steaks or roast beef.
Peel the onions, leaving them whole. Cook in boiling salted water for 15–20 minutes until tender, then drain and keep warm. Add the butter to the hot saucepan and allow to melt. Add the tomato ketchup and bring to the boil. Replace the onions in the pan and toss well to coat with the glaze.
