Gruyère cheese is expensive to use for cooking but it really does go crisp and brown under the grill and you can use less of it to get a good flavour. Hot cauliflower cheese is particularly good served with cold chicken.
Trim the cauliflower and break into medium-sized sprigs. Cook in boiling salted water until tender – about 8–10 minutes.
