A cheese sauce served over any cooked vegetables helps to supply the protein necessary to make them into a nourishing supper dish. On another occasion use chicory in place of the leeks in this recipe, they are just as nice and should be cooked in the same way.


  • 4–6 leeks
  • 4–6slices ham


Slice away the root and trim the green top down to within 2.5 cm (1 in) of the white stem on each leek. Wash well in cold water and then add to a pan of boiling salted water. Simmer for about 15–20 minutes
