Whole oranges piled high in a serving bowl with a scattering of finely shredded peel are a feature of the dessert trolley in most smart restaurants. Now they are a popular dinnerparty dessert and one that can be made all year round. Cutting the skin off the oranges is the most exacting part of the preparation and should be done carefully. Otherwise they are easy to make and should be prepared well in advance so they are thoroughly chilled before serving.
