To get the true delicate flavour of mushrooms, they must be really fresh. Button or the slightly open cup mushrooms should be used. Slice them almost paper-thin with a razor-sharp knife and dress them in a shallow china dish for serving as a first course.
Wash the mushrooms and trim the stalks level. Slice thinly, then place in a bowl along with the prawns. Combine a good seasoning of salt and pepper, the strained lemon juice and the olive oil for the dressing. Pour over the mushrooms and shrimps, toss well and leave to marinate for 1 hour before serving. Sprinkle with chopped parsley before serving.
