The fresh apricots that come on to the market at the beginning of the season are often slightly under-ripe and rather firm. This is a very good method of cooking them.

Ingredients

  • 675 g/ lb fresh apricots
  • 100 g/4

Method

Place the washed, whole apricots in an ovenproof dish. Add the sugar and the strained lemon juice – no water is required since the sugar and lemon juice alone form a delicious syrup for the fruit. Cover with a lid, place in the centre of a slow oven (150°C., 300°F., Gas Mark 2) and bake for 45 minutes-1 hour or until the fruit is tender. Serve warm or cold with cream or ice cream.
