This attractive pale green mixture will surprise your guests if you serve it rather as you would a pâté – that is, with hot toast. Avocado fromage has a soft, spreadable consistency and a delicious flavour.
Halve the avocados, remove the stones and scoop out the flesh with a spoon. Mash the flesh well and then beat in the cream cheese, lemon juice, onion juice, salt and Worcestershire sauce. Blend the ingredients very thoroughly to form a smooth mixture – it’s best to purée the ingredients in a blender.
Spoon into individual china soufflé dishes and cover close to the surface with a piece
