Stroganoff Sauce

Few of us can afford the steak for beef stroganoff any more but you can serve the stroganoff sauce and it’s delicious over hamburgers or chicken. Use button or closed mushrooms in the sauce so it retains a light colour.

Ingredients

  • 1 small onion
  • 25 g/1 oz butter
  • 50 g/2 oz button mushrooms
  • ½ teaspoon concentrated tomato purée
  • 1 carton soured cream
  • salt and freshly milled pepper

    Method

    Peel and finely chop the onion. Melt the butter in a frying pan, add the onion and fry gently for a few minutes to soften. Trim and slice the mushrooms, add to the pan and cook gently for about 5 minutes.

    Stir in the tomato purée and soured cream and bring just up to the boil. Season to taste with salt and pepper and serve at once.
