Strawberries with Devonshire Sauce

The addition of soft cream cheese to fresh cream gives a flavour not unlike Devonshire clotted cream. The blend goes particularly well with strawberries, but take care to use fresh cream cheese or a foil-wrapped packet of full fat soft cheese, both of which are very mild in flavour.


  • 450 g/1 lb fresh strawberries


Wash and hull the strawberries, place in a serving dish and put to chill. Beat the cream cheese until soft and smooth and gradually beat in the cream. Stir in the sugar, lemon rind and lemon juice and blend well. Chill well. Pour over the strawberries and serve.
