  • 285-g/3-oz packets cream cheese
  • 1–2 tablespoons cream
  • salt and freshly milled pepper
  • 100 g/4 oz peeled prawns
  • squeeze of lemon juice


    Beat the cream cheese until soft, adding a little cream or milk. Season with salt and pepper. Chop the prawns and stir into the mixture. Add a squeeze of lemon juice to taste. Use to fill six sandwiches.
